Cozze Con Salsiccia
15 mussels
swiss chard
1 clove garlic
Italian sausage rendered into chunks

Breadcrumbs
10 c. Panko crumbs
2 # butter
10 shallots minced
1/2. c olive oil
Salt
pepper

Method
Sweat the shallots in oil and butter, add the panko.
Mix, Season and Brown in the oven.

Before Service
- Swiss chard braise with garlic and olive oil.
- Brown the sausage in olive oil.
Cook mussels with sausage and swiss chard, until they open.
